I have spent the last year devouring food knowledge. Where it comes from, how it is produced, and the energy required to make it appear on my plate. I have gained so much respect and appreciation for the people preparing my food and the many people who participate in its journey from the farm to my fork. I have developed a relationship with my local community of food growers and producers which has lead to a deeper connection to myself. Not to mention the pure joy I have experienced in the kitchen preparing a meal for my loved ones. To me, food fabrication technology deletes the invaluable human capital that is gained from getting your hands dirty in the field and in the kitchen! That is my food for this thought :)
